GREENSBORO, N.C. (WGHP) — Local restaurants are feeling the heat from the increase in egg prices. For brunch spots like The Sage Mule, eggs are a big part of the menu.
According to the consumer price index, egg prices hit an all-time high last month, costing $6.23. In March 2024, the average price was just $2.99.
Eggs have become a luxury item for some after prices skyrocketed to an all-time high in March 2025, according to the consumer price index.
As prices continue to stay higher than consumers have seen in years, The Sage Mule is working to keep customers coming in.
Executive Pastry Chef at the Sage Mule Nick Lingle said they’ve taken a hit.
“The biscotti I make that everybody gets with their coffee in the morning. One batch of them takes 16 eggs. I actually changed the recipe. It used to take 24 eggs, so I changed the recipe on that … I have changed some things to kind of accommodate the prices,” Lingle said.
It was important to the restaurant to make sure customers don’t feel that impact when they get the bill.
“We want y’all to come in and have a good time and not spend a crazy amount of money and feel like you got your money’s worth,” Lingle said.
The menu is primarily brunch items, which means a lot of eggs.
“I would say closing in on 50 percent, but at least 40 percent … We just added omelets to the menu, too, which of course are all eggs,” Lingle said.
The crew is getting ready for the holiday weekend.
“It hasn’t really affected our sales. People are still coming in. We’re busier than ever … These last few weeks have been crazy busy. On a Sunday, 300 to 400. Probably more, honestly,” Lingle said.
